The Department

Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong.  We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses.  In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organisations for a variety of functions.

The Job

  • Ensure operation excellence of the floor by:
    • Provide customer services by giving the advice about wine selections and promote products to customers in professional skill.
    • Working closely with RM & Chef de Cuisine on beverage promotions, BV marketing programming & BV cost effective.
    • Actively engage in upselling wine and other beverages to members. This involves recommending premium or complementary options that enhance their dining experience.
    • Organise, Wine Dinner, Wine & Liquor Masterclass, Wine Liquor Events at both Derby Restaurant & Bar.
    • Conduct training sessions for both Restaurant & Bar Team to improve their knowledge skills in beverages &   upselling techniques. Provide them with information about different wines, spirits & cocktails, teaching them effective upselling strategies.
    • Providing ownership & direction to staff in delivering excellent service in line with membership service pillars.
    • Managing equipment other resources and assets; initiating requisitions via supervisor as required
    • Mastering CAMMS, FABP & related systems requested by the RM.
    • Offer assistance daily to the service in all the sections where the RM may need at the Restaurant or at the Bar on the daily basis. This may involve stepping in to help with serving members, taking orders, or any other tasks that contribute to ensuring smooth operations during busy periods.
    • Be in charge of all the Wine List at Derby, Cellar & all BV Inventories or Audit for both Restaurant & Bar.
    • Assisting the RM to run daily operations at Derby Restaurant & Bar.
  • Perform any other related duties daily as & when assigned by the Derby Restaurant Manager.

About You

  • A degree or higher diploma in Catering Management or equivalent
  • At least two years’ experience in similar position in wine or luxury gourmet industry or two years’ experience at similar level in a 5* hotel or Michelin Stars Restaurant
  • Accredited international wine master certification
  • Working knowledge of Microsoft Excel, PowerPoint and Word an advantage
  • Understanding of international wines and sales trends
  • Knowledge of HACCP systems are an advantage
  • Fluent English, French & Cantonese an asset

Terms of Employment

The level of appointment will be commensurate with qualifications and experience.
