Executive Chef – Asian & Chinese Cuisine
We are seeking a talented and experienced Chef to oversee the culinary operations and culinary teams for a premium Food Hall/Food Plaza at a casino hotel in Macau. The ideal candidate will have a strong culinary background with operational food hall experience.
Responsibilities:
- Control and oversee the operations in the food pavilion kitchen and ensure high quality dishes are served timely
- Research new concepts and create new menus and recipes on activities, promotions, menu implementations
- Develop and implement an innovative business strategy to maximize revenue and productivity
- Monitor the quality of food production and consistency on a daily basis
- Provides training, coaching, mentorship, motivation and direction to all kitchen colleagues, continually striving to develop colleagues in all areas of culinary and leadership skills to exceed guests’ expectations
- Assess food quality standards and arrange training sessions and refresher courses for kitchen staff in coordination with the F&B Trainer
- Follow health and safety standards and strive for constant improvement to avoid health and injury hazards
Requirements:
- Minimum of 6 years’ culinary management experience in a high-volume restaurant, food hall in China and South-East Asia.
- Pre-opening experience and with experience in managing multiple kitchens including kiosks, food counters, full-service kitchens, production kitchens, etc.
- In-depth knowledge of different kinds of Chinese regional cuisines and Asian cuisine is essential.
- Fluency in English, Mandarin and Cantonese is a must
